What Does a Food Runner Do?

A food runner delivers finished plates from the kitchen to the correct guest while the food is still hot. The role lives at the expo window: the runner checks each plate against its ticket, confirms modifiers and allergy flags, then uses the table's position numbers to set every dish in front of the right person without asking. In a busy restaurant, runners are the reason servers can stay in their sections instead of sprinting to the pass — and the reason a line cook's 10-minute ticket does not become a 16-minute one dying under a heat lamp.

Why seat numbers matter

Every seat at a table gets a position number (usually clockwise from the seat nearest the door or a house landmark). A runner who reads "Table 12, seat 3" off the ticket delivers silently and correctly. A runner without seat numbers auctions the food — "who had the burger?" — which reads as sloppy to guests and slows the whole floor down.

The pay rows are cash wage only — what payroll hands over before a single tip lands. Servers look cheapest on that line because most states let you take a tip credit against the minimum wage. In the states that ban the tip credit (CA, OR, WA, NV, MT, MN, AK) a server costs payroll the same $12-$16/hr a runner does. Check your own state minimum before you budget either number.

In restaurants under roughly 100 seats, one person often covers both the runner and busser jobs. If that is your setup, say so in the posting and combine the duty lists — surprise side work is a fast way to lose a new hire in week one.

Food Runner Pay: What to Offer in 2026

Most independent restaurants pay food runners $12-$16/hr base plus $3-$6/hr from the tip pool — a step above bussers ($10-$15/hr) because of the menu knowledge the job demands. 3 Tips for Hiring Great Food Runners

1. Test menu memory in the interview, not month two

Hand candidates a one-page sample menu at the start of the interview. Ten minutes later, ask what came with the salmon. Runners who cannot retain plate details will auction food and miss allergy flags no matter how fast they move.

2. Lead the posting with the promotion path

"Food runner" reads as a dead-end job to most applicants. Postings that state a concrete runner-to-server timeline (3-6 months) pull a noticeably stronger applicant pool for the same wage.

3. State total take-home, not just base

A $13/hr base with a real $4/hr tip share is a $17/hr job — but only if the posting says so. List base plus average tip share as a combined hourly figure and explain when tips pay out.
